I have done quite a bit of research and have found a lot of controversial information in regards to what's makes a healthy and complete diet for my American Cichlids. Right now I have them on a diet of frozen scallops, tilapia, shrimp, salmon, peas, garlic and spirulina. I feed Hikari gold pellets twice a week and the frozen combination 5 times a week. I am wondering if this is a good balanced diet or if I need to add/remove any ingredients.

I'd remove the scallops myself.. unless you know of something very specific and important that they are getting from them.

I usually add a bit of greens (romaine & spinach), and some crushed vitamin C pills, zucchini or cucumber.. Really, each time I make it, I change it up a bit based on what I have available or try adding in something new I have read about. I use a lot of tilapia. I've read salmon is oily so I haven't tried it. Been meaning to try some of those small salad shimps too. I think variety is good. I must be doing something right because the fish go bonkers for it! It's pretty cheap too compared to what you get in the store.
