Can grand sumo pellets really make that much of a difference than regular pellets?? I have a nice pink zz now and I just wanted to know if it's worth the hype???

It's not worth the money. Varied diet is best. I just recommend a good staple pellet pellet such as omega one, new life spectrum, hikari, or cichlid extreme.
It applies not only to FHs but every aquarium species(kok excluded).Good supplement of various live foods and good pellets makes fish healthier,increases growth rate and of course their body structure as well.So grand sumo is not the only solution.Feeding various live foods+good pellets works for sure.
