So rehomed a dovii pair about 5 days ago. Male is around 16" female is around 8". Both of them are currently just showing zero signs of hunger.. They've ignored shrimp and any pellet I've throw in. Any reason why they just aren't showing hunger and is it worth maybe just waiting 1 more week then drop in some pellets?

They are just stressed from the move. Imagine a giant forced you to move from your home. You probably won't have much of an appetite.
Cichlids can go a very surprising amount of time without eating. I would give a small amount daily. Remove it after five minutes if not eaten. A fish won't starve itself to death, once settled in will start eating again.

Assuming water quality is good and the fish are otherwise healthy. I’d follow Jexnell Jexnell advice above.

Okay cool yeah they're abit skittish at the moment as well so I will do as you said, is there anything I can do to help them settle in better? its like day 7, should I reduce light even more or just keep walking near them and looking at them so they recognise my presence?

Yes water quality parameters are fine and theres adequate filtration on the tank to account for the huge bioloads of the dovii beasts!
