Pretty general question. How big is he/her? Tank size? Hows your water quality? What temp you keeping it at? Give us a bit more info

Why do you want it to eat more? Is it losing weight?

Fish are cold blooded so they don't need as much food as cats and dogs. Unless your dovii is losing weight I'd wager he/she is eating enough, even if it doesn't seem like it.

He’s currently housed in 210 gallon tank, I have a fx6 and power whisper for filtration. The water is currently 78 degrees I just did a water change I usually keep it around 80 degrees.

Yes it's a lot of questions, but you asked a very general question and there are lots of different reasons which might cause the fish to not eat much. Trying to narrow it down.

I upgraded the tank last week, i let the tank run with the old gravel old filter and pots from previous tank with the new fx6 for about a week. Ive seen him eat but i would like to see him eat more like the doviis i see on you tube
 
Assuming water quality etc is on point. You could bump your temp up to 82. Aside from that not overfeeding at one sitting will help. I fed mine 4-5 times a week at that size.
 
Why do you think he isn’t eating enough? That plus all the other questions above and we can figure it out
