Im setting up my new 180gal and it has dual overflows on both ends. In an effort go get more tunover im going to be using both holes in the overflow as drains. There is a 3/4" and a 1" bulkhead fitting that i made dursos for and i was wondering if both pipes should be the same heigth or if its better that there staggered?

They will be fine staggered, but the lowest pipe will generally regulate the water level, but that can depend on how many gph you are running.

IMO, it doesn't really matter. The taller one will pick up where the other left off. I would make them the same, but if I had to pick one to be shorter, i would go with the 3/4".

Not a problem.

What is a durso?

I have already cut them with the 3/4" one shorter. After i did then i went looking for opinions.:) But i didnt cement them in place so if it doesnt work out i can always recut it.
