Dying Plants Affect Water Parameters???

New to planted tanks and had a question which I'm sure many can answer....If there are any signs of plant dying due to whatever reason (insufficient lighting, not enough CO2, etc...) would that in any way affect your water parameters ie. ammonia, nitrite, nitrate, etc??? I just wanted to know if there is anything bad when it comes to dying plants other than the fact that your plants are dying.
 
Would you leave a dead fish in your tank?

Now replace fish with plant, the answer to either question should be the same.
