This happened with mine and I’ve seen others as well, but every time I had them, once they are around 2 or 3 years old they start to fade in color and look raspy and drab.

Anyone hear of this, know why, or seen it?

Yes I have a female EBA that her color is not vibrant as when I got her 4 yrs ago. Some other species will start to fade in color with age as well.
 
Many cichlids fade a bit once they've past their prime reproductive period.
But since the EB Acaras are a line bred form, this may also a factor.
Dang we’ve both been here since 07 lol, except I took a long break when they started the like and trophy stuff so I didn’t get to accumulate all that lol
