My two electric blue acaras are both healthy and I believe I have a male and female, over the last two days I have noticed that they will both swim round and then bite and the plants aggressively, this is the first time I’ve seen them do this is it standard behaviour?

Sounds like normal behavior, they might be trying to find a spot to nest.
Sounds like they may be preparing to spawn. Look and see if you notice the egg tube dropped.
This is normal courtship behavior.
The male will grab plants and shake them to display for the female.
This happens early on in the pairing so in a few days you will notice them cleaning a spot.
If you have a flat rock or something similar place that where you want them to spawn.
