My bf just bought me a Fahaka (my first REAL monster fish) and I was wondering how fellow Fahaka owners have their tanks set up? Right now he is about 2' and is in a bare 29g. What substrates would be best to really make his tank stand out? Thinking white sand....maybe some plants and or driftwood? Any other advice would be greatly appreciated!!

I would not waste any money on the 29.
Just put all your resources towards getting atleast a 75g set up. That way it can spend a good amount of time in the tank.
A 75 should give you a couple of years before needing something bigger tank.
Any money or time spent on the 29 will be for nothing in a couple of months when you have to upgrade.
