What are your favourite "local" freshwater fish to fish for?

My favs are the Mountain mullet:

Note, this is not me in the image. Anyway, I don't live in the U.S.A., so the range of freshwater fish available is limited. This however is a native freshwater fish found in fast flowing streams. It usually grows to about 18 inches long and can weigh about 2 lbs. It's extremely difficult to catch with rod and reel, and can hit like a10 lb fish. The largest I've caught was 14 ounces and 10 inches long. That's how difficult they are to catch. They're so shy, that you can only catch them when the water is cloudy after heavy rains (that's when they hunt using their sense of smell rather than vision), though if you're lucky, you can catch them when the water is clear. I like fishing for these...they're like my own version of trout.

Another of my favs is the (introduced) Mozambique and nile tilapia:

They're found in large estuaries, and in a large man made pond near my home. They grow to huge sizes ( 15 lbs or more) here because of lack of predators (except for humans and some birds). I've seen people land massive tilapia, but I've never caught one myself. I've come very close though, and the fights are awesome!
 
i generally fish for whatever is biting. White Perch in the spring, Bass/Catfish in the summer. Yellow Perch and more Cats in the Fall.

My absolute favorites are Catfish and Yellow Perch.
This is the biggest channel catfish ive ever caught at 13lb 12oz, ive never seen any bigger ones caught but i know 20lbers are landed frequently in other parts of the state.

Flathead catfish are quickly becoming a new favorite. These fish are super picky and generally will only hit a live bait at a certain time of day. Biggest one we caught this year was 10lbs on the nose. These fish were introduced to our area and are quickly growing. 30+lbers are uncommon but fish approaching 40lbs have been caught.

Last but not least is the yellow perch. I absolutely love these fish. They have gorgeous colors and have quite the fight for their size. This fish is 12" and would be considered a decent fish.

Back home I enjoyed catching these:
Tigerfish, niloticus, various other tilapia, cornish jack, pike, odoe pike and big catfish.
But in Taiwan, unfortunately, fishing is nigh on nonexsistant.
 
I have native Brook Trout. Yum

I also forgot oscure swamp eels. I usually catch these with my hand, but i do catch them with a tiny hook, a line and a stick or bamboo. I cut in between the bamboo or stick, fit the hook with a bit of line in there, then poke along undewater caves with only the bait showing. The water is so shallow, that that's the only way to catch those in caves. The largest one I've caught was 75 cm and 2 lbs.
