Feeding my African Oddballs

Hello all, I've just started a 55g with the following stock: 9 Congo Tetras, 3 Upside-Down Catfish, 1 1.5" Leaf Fish (Ctenopoma acutirostre), 1 3" Senegal Bichir, and 1 4" African Brown Knife. Things seem to be going well, but I have some questions about feeding that I'd appreciate some help with.

Current Approach:
Feeding in the morning and evening, sometimes skip a meal if I feel I've been over-feeding
Each feeding will be 1 or 2 of: [flakes, freeze-dried blood worms, Hikari sinking pellets, algae pellets, shrimp pellets]

Planning to Try:
Some(?) kind of frozen food, Beef heart for the bichir, Live shrimp

Questions/Concerns:
Is this a good mix of food to provide?
Is my feeding schedule appropriate?
The tetras have become quite the little piggies. They seem to be making it difficult for the Knife and the Leaf to get food. Should I do something to address that, or let them sort it out? I'm mostly worried about the leaf b/c he's much smaller and slower than everyone else.
