Feeding.

Not cucumber or lettuces.
Personally I like potatoes, peas and courgette... really it's up to you and what your plecs like. I like the veggies with a good nutritional value and a decent amount of roughage.

Check what species you have as they do have different dietry needs.

But assuming you have one of the common omnivore types its best to mix the veges up and feed them whats available locally / seasonally that you find they like. If you mix in veges, pleco tablets and a bit of higher protein food they should do fine. But

Zuchini seems to be the favourite starter vege, experiment from there. Mine like mushrooms, sweet potato and blanched green beans as well. I refuse to pay the crazy prices for off season veges, so they only get zuchinni when it's in season and cheap. Frozen green beans are allways in season :D

egg plant is the best
Eggplant is not the best, variety is the key, and proper diet. Few plecos eat exclusively vegetation.

Eggplant is fine to feed to plecos, but what Wyldfya is saying is to mix up it's diet a bit more. How would you like to be fed nothing but eggplant ;)
Some different veges, tablet foods and occasionally some meatier food will keep them happier and healthy.

Should i prepare the potato in any way? And can i leave it in until its gone?
If they eat it in a few hours, then yes, if it takes more than 12 hours, then no.
