I'll try and help a bit:

1) I've seen people load up a 55g tank with ups to 150lbs of rock. If you're going to be putting a lot of rockwork in, it's best you lay "eggcrate" underneath your substrate. This way any rock stacks you put in will not cause any pressure points on your glass bottom. Eggcrate is actually a lighting diffuser & looks like this http://www.collins-consulting.org/orchids/eggCrate.jpg It's available in most hardware stores.

Use your common sense when adding a lot of rocks. I would try to keep the rocks stable & make sure they are not leaning with a lot of weight against any glass areas.

Water is roughly 7lbs per gallon so when you add rock weight to a tank, it will displace some of the water weight, but don't get crazy. You want to make sure you have a solid wood stand that can support this 24/7 weight. I would feel comfortable adding maybe 80lbs or less to a 60g, not to say you can't go more, but I don't like to tempt the devil or my tank stand.

2) not sure who the "them" is on this question? How do you stop the fish from eating the Kenyi fry? be more specific

3) not sure on the kenyi fry, you have to let us know where they are, if they're in a tank with larger cichlids, they'll most likely be eaten. Where are the fry?

best,
