I have a 55 gal. tank that has been set-up for about a year now I did have an Oscar in it but he pasted away awhile back. I have had other fish in it and had no problems.

Right now I have,
20- assorted African cichlids
4- Red Jewels
2- Clown Loaches
2- African Catfish
2- Plecos

I talked to my local fish dealer and she said that I do not have too many fish in the tank, but can't figure out why my filters are getting dirty so quickly, and only feed the fish once a day. I have a Top-Fin 60 running 2 filter cartridges, and a Tetra Internal Whisper power filter that filters 10-30 gals. I was wondering if I am doing something wrong, or if I need to just get one big power filter instead of the two? Can anyone help please?

Well I would disagree with the LFS gal, your tank is pretty heavily stocked and the two filters you mentioned are not very good quality. I would recommend going with an Aqua Clear 110 or a Emporer 400 in addition to your other two filters. Also do not buy these filters from your LFS gal, you can get them online for half the price she will sell them for.
