I have a 180 gallon tank with a cf500 cannister on it right now...Im just wondering why some people say two to three cannisters are necessary on a tank

Just a few of my reasons
1. Turnover rate, your one filter only passes tank volume through it a little over 2x per hour if its empty. More filters equals more flow and more time water can contact the media
2. More filters will hold more bio media

But also depends on your stocking levels... if you have heavy stock, then its probably a good idea to have the extra filtration, but if you have very light stock, then you MAYBE able to get away with one...

I personally run 2 canisters and a UV on my 200G, but still considering adding more due to having messy fish...
 
Also, you can alternate between cleaning so you don't loose your goodies/bacteria in the canisters.

And if one fails you still have some filtration with another one or more added.
