I have a 100g tank with about 15 2.5-4" geos in there. I have a Eheim 2217 and an XP3 running on it right now.

I was thinking about selling both of them and using an FX5 instead. I want to make the maintenance easier and to me, it's easier to clean 1 big canister than 2 smaller ones. (I was also thinking about buying one of those SunSun filters too to save some money.)

Would it be better to have the 2217 and XP3 in my tank or is it better to have an FX5? The thing with my two smaller canisters is that there's still a lot of waste on the sand even with 2 filters running. I was thinking about buying a bigger one to increase the flow rate and try to have less waste on the ground.

You'll get more flow but both of the filters you already have are a little more "sand friendly" being that the motors are on the top as opposed to the bottom like the fluval. Not a reason not to do it, just something to consider. You might want to consider a powerhead or koralia to stir up the bottom a bit. The fx would work if you put a prefilter over the inlet strainer....

I prefer the FX5 on this type of setup. Honestly I am supprised you have anything left on the bottom at all with geo's in the tank. They keep things stirred well. I agree on adding a powerhead to the bottom if the FX5 does not make you happy. I like running the FX5 because I can easily switch them back and fourth on other tanks if needed without even touching the plumbing. I use many FX5's in my house.
