Fire Eel Coloration

From what I understand, many fish tend to change pigment slightly with age given the colours present in their environment. Is it at all the same for Fire Eels?
IE, if I had a light or dark substrate, could I expect a Fire Eel to be more gray/deep black when mature?

And as an extension to that while I'm here - what are the best ways to maintain the lovely red and yellow coloration that runs down their bodies? I've read that it's often based on how well they are kept - in the context of this species how would I keep one to promote that quality?
