Well, I finally finished and launched my old skiff, and took my Pop out for some fluke fishing. We had 10 fluke between us, (only one keeper) and this little cocktail bluefish. The fluke went with Pop, and I ate the blue with the wife. He's a little monster at around 3lbs, but they sure fight like hell, and his teeth did a number on my jig.

Bluefish usually taste like crap to me, but here is an experiment that came out well:

Ingredients:

- small bluefish (2-5 lbs max) NOTE: You must bleed the fish immediately, and fillet & cook him within 3 hours!

- Organic brown rice, water chestnuts, mushrooms, white onion, green beans, butter, olive oil, adobo, onion powder, soy sauce

- Metal pans, non-stick tastes like butt

Process -

Fillet fish (make sure to remove dark meat and skin), and slice all vegetables.

Cook rice (usually takes 25 min, do this first), make green beans in microwave with pat of buttter for side dish (can do this at the end of cooking everything else)

In one pan, put some olive oil, and stir fry the water chestnuts, mushrooms and onion. Mix in a generous amount of soy sauce, and feel free to add fresh garlic or a touch of Adobo.

In the second pan, melt a generous amount of butter. Place bluefish fillets in pan, and season with soy sauce, a touch of Adobo, and a touch of onion powder. Cook on low flame for 5-10 minutes - depends on your pan and fillet thickness. Add more butter, flip and re-season. Fish is done when you can poke a fork through it with no resistance.

Arrange everything nicely on a plate, serve and eat!

Blues are one fish I have never caught.
 
Guppy - blues are maligned unfairly by many folks around here because they simply don't hold the culinary appeal of other local species, and they will chew through heavy mono like butter, not to mention nets and fingers.

A big chopper blue in the 10-15 lbs class will outfight a striper twice thier size, hands down. Fun fish to catch, just watch your hands and have a good gaff or lip grip ready. Live blues also make great shark bait, especially for Makos. :headbang2
 
I have no predjudice against them, just haven't fished much in their range. Back when I was a kid I read a short story about a cat that lost a paw to one.
