fish color and temperament

i have a tank with 6 various types of cichlids, most south american. my question is when the fish get mad do they change color? this may seem a bit weird, at least to me (its like the fish is getting red faced), but it seems like i will come in the room and one of my convicts will be extremely dark(much more than usual) and he will be in there freaking out on everyone. Is this normal?

What are the other fish in the tank?? It to me sounds as if you have a male con who is showing some color to a possible female or showing his color as a sign of Tank Boss.
