Caught a bunch of catfish and rock bass today while fishing along with a 12 inch smallmouth that I’m currently filleting and found out it has eggs. I’m wondering if I can feed these eggs to my flowerhorn. Should I freeze for a couple days before feeding them to him

I don't to anything to prepare the roe, just drop it in, or if in a sack, split the membrane to scatter the eggs and give all fish an equal shot at eating a share.
I have not noticed any effect of color them eating eggs.
My fish also get a lot of insects, and even geckos found laying around the patio in the morning.

Not quick enough!
The carcasses (sometimes just tails) are found laying around, (along with insects, and the like) dropped by the critters that are fast enough.
Nothing goes to waste here.
Without access to normal prepared fish foods, its the only way to go.
But I must admit my fish will sometimes go 2 or 3 days without eating (I believe they are healthier because of the fast).
The only thing not fed here, are the toxic frogs and tadpoles.
