Fish in Cycle

So I have a 75 gallon tank with a peacock bass and two parrot chiclids. They’re young probably only about 2 inches and it’s been two weeks. My filter is a fluval 407 and i also use an airstone. I use stress coat and stress zyme bacteria. I set up my tank added the stress zyme and coat then 3 days later got the fish. For the two weeks the fish have been in there they’ve been doing amazing eating like crazy and growing fairly fast. Though i constantly check the water and i’m reading .5ppm ammonia and 0 nitrites and nitrates. Also me being a newbie at this I didn’t let the tank cycle because i didn’t know better. I’m also planning on removing the chemical media in my filter and replacing it with more mechanical and bio media soon. Since I read that phosphorus and carbon don’t do that much. So what do I do? I’ve heard prime and stability help out with the cycling process and when should I replace my media without messing anything up and should I water change like 30% immediately?
