fish vitamins and probiotics?

Considering that vitamin research is inconclusive in humans, where a lot more research has been done than with fish, I wouldn't.
In fact, I don't.

I use multiple varieties of quality foods so they get good nutrition from varied sources, and maintain good water quality.

Its interesting that you mention probiotics, with vitamins in the same context.
Although probiotic for humans might mean a food such a yogurt with bacteria such as acidophilus, that enter the digestive system .
For aquarium, the term probiotics often refers to the use of beneficial bacteria in the system itself, as opposed to food.
In aquarium lingo, a probiotic bacteria is one that competes with pathogenic bacteria for dominance in the filtration system, the substrate or other general areas.
It may mean a product like Rid-X that inoculates the system with populations of non pathogenic bacteria, to basically edge out the ones become infectious to our fish,
These can be very beneficial to the system, some like rotifers consume waste and metabolism by-products, thereby preventing the pathogens a place to live, and raising water quality. They can also use up substances that prevent an organismm like cyanobacteria from getting a foothold.

There is nothing found in Vitachem, that isn't already found in the food that you are feeding your fish. Products such as Vitachem are best suited when one feeds a diet that is primarily made up from frozen foods.

With regards to probiotics, and aquaculture, they are used as both a feed supplement for gut health (just as in humans) and it is used in the water column to break down waste, while also acting as competitive exclusion against pathogenic bacteria.

I use Vitachem when I'm feeding my RBP's fish fillets.

As for probiotics, I use Septobac which you can find at Walmart, Superstore etc...I put it in the water column when doing WC's.
