Fish with potential size

I'm starting my first marine tank soon, it's a 30 gallon half moon. There's fish that I could be potentially interested in, but I know my tank won't support it's size. Mainly I'm wanting a foxface. My lfs, whose owner is a family friend, offered to find me a small fish, and once it outgrows the tank, he said he'd pay me more than I originally paid in trade. Is this a good idea, it's fool proof for me but I'm thinking about the fish's overall health. Would it stunt his growth or shorten his lifespan to begin life in such a small tank?

Foxface's don't grow particularly fast and only max out at like 8-10 inches but as long as you don't get attached to the fish and he will take it back so he could house it properly for life I don't see the issue!
 
I have a blue throat trigger in my 90gal tank. It's only about 5" long right now, but my LFS does the same thing for me. They pay me market price for the fish I grow out for him.
