Fishing in South FL

I arrive in FL on Wed morning and will probably be doing some fishing in between getting intoxicated and tanning.
My question is what type of cichla can i expect to catch down there? Is it just ocellaris?
How about shipping large wild fish? what will i need to bag and ship them up?
 
In the canals by where I live there are a lot of Peacocks and the invasive flower-horn. Those things are everywhere.

If you're talking about the Orange fat fish with a kok on their head, they're Midas not flower horns. A common misconception with both species having large koks on all adult males.

All the cichla in Florida are Hybrids and look mostly like Ocellaris and Monos. Some will look nicer then others, but there are no guarantees that you will want what you catch and large cichla will not do well with shipping especially wild ones, they will go belly up.
 
what about shipping small bass. How many per bag, how much water & how long can they be in a bag for?
