I have been treating my tank for Ick for 10 days with quick cure, yet I have never seen white spots. Could the fish just be scraching for no reason?

Could be gill flukes or another type of insider bug. Can you get a good peek into the gills?
What species? Sunfish are known to flick at random to scare up bugs and worms from the mud.

I have loaches, red tail shark, oscar and JBJD. They all tend to flick of the rocks randomly. Loaches tend to do it after a water change.
