So here's the problem: the old pellets that I used sink and the new ones float.
When I put the new ones in the tank the fish know that there is food somewhere because they come out of hiding and start swimming all around in search of the food source, but it seems like they can't find it. Is there anything I can do to help them find the food or should I just use patience?

I would just wait.. I have a small tank but used flakes which sank after a time so that my Loach would find them.. then i got freeze dried blood worms which i swear never sink and my Gourami loves them.. but i felt bad for the loach because he spends all his time at the bottom of the tank.. the other day i noticed him making the trip to the top for the worms now i can tell when the fish are hungry because they swim up looking around the top of the water

you could also put some of those pellets close to your powerhead, or HOB filter's output, the water will push the pellets downward, so your fish can see them, and if they're smart enough (my 3 small one's haven't learned this yet) they'll follow the pellets up.

My big guy learned it that way, and will eat from midwater, and topwater.

good advice guys. thanks. hopefully they learn or i just wasted $10 on food.

Well maskter.k. it's been two days and, as predicted, they found the floating food. you got any lotto numbers i could use?

LOL

When they're smaller, it never takes them too long to figure things out. I'm glad they're mowing down those pellets for ya! ^^
