Flower horn feeding

Hello guys,
I bought a flower horn fish about 4-5 inch long.,Don't know it is male or female,
Now i consider him it as a male.
and i am new to the Flower horn fish keeping.
I don't know how much should i feed him,
I have a tin of 'bumpy head' pellets, which was advised by the shop keeper(he told me to give this pellets only,he stated the reason as if we give him small fishes or shrimp he won't eat the pellets which is essential for his hump growth ,this from the shop keeper's experience)
These pellets are about 3x3x3 mm square or similar sized round, with a brown colour.
In the morning i fed him 12 pellets, and he is asking for more,
Don't know will that be overfeeding

How much should i feed him?
And is there a problem as the shop keeper said about feeding shrimp,small fishes,crickets,,.etc?

Pellet alone wont enough for your fish..u must sometimes fed it with shrimp, cricket etc..dont give too much as it is true will make it stop eating pellet..

Male, looks like a Kamafa but im not an expert at saying breed, He looks really good to me though, flowerhorns are big eaters, they will eat allot of food if given the chance, too much usually, As always feed twice a day, hard to say how much as Im not aware of size of those pellets but really just feed him a few pellets at each feeding if they are large pellets, I really like NLS for all my fish but I know some flowerhorn people are really picky about the food they feed them. Mine seem to do really well on it and then they get shrimp and talapia with the rest of my fish.

I am a newbie to flower horns.
Is it a higher graded or lower graded FH?
