I have black gravel in my 20gallon... and I heard black gravel is not something good to have to enhance his colors.

Now, he has only been there 1 week...and will be there maybe another 2 weeks before I Move him to a brand new 60 gallon...with blue, orange gravel...and spray painted blue background.

Would this period have coloration effects on him? Or will he be go back to his old self (if he loses color) once moved into a brighter tank?

Another thing,

Today he has been digging the crap out of the gravel...rubbing his belly in there ....swimming fast from one side of the tank to the other...normal behavior?

The color thing is just temporary, that can change often in cichlids of all types. Mine will switch up during any given day.
and some of what people refer to is just how they "appear" in contrast to surroundings. so no color worries for you!
 
Like petspoiler said, his color change is temporary. The gravel digging is something most cichlids do on a regular basis so I wouldn't stress it too much...he's just customizing his place.
