So... I have an aquarium with my collection of ten discus that I expect to in time begin to pair off (and I’ll decide which to keep to minimize the collection).. I see Jack Watley in Miami use them in all of their breeding tanks so I want to put a couple in so they have a smooth surface when the time is right. At that point I would have to divide the setup... but what I’m asking is, how do I know if these are sage? They will have no effect on my ph or other water parameters?

Flowerpots are very popular. They will be absolutely fine and won't effect water parameters one bit. Most people go with the terracotta pots made from clay, but plastic flowerpots, typically made from polypropylene can also be used. Note that the polypropylene ones will need to be weighted down as polypropylene will float. The only thing i'd say about the pot ones is....don't drop them!
 
So you guaranteed my discus will be safe with these terra-cotta pots lol? I mean I guess that’s what they are. I bought them at Lowe’s.

Would you consider my fish breeding size? I would expect to seeing pairing over the next few months after they get comfortable wouldn’t you think? Jack watleys partner told me to get the pots but the right kind, for whatever reason he says they love the smooth rounded surface to lay the eggs.

As they pair off I’m going to downsize the collection and sell a pair or two to free up some space for my favorite pairs lol.

Its true that a lot of Discus breeders use flowerpots as breeding props, but the setups I've seen that use flower pots are rather sterile looking. No substrate + flower pots. It appears you are into aquascaping. Why not use large peices of Rainbow Slate or XL peices of rounded River Rock and incorporate stones like those into your hardscape. All Discus need is a smooth surface.
In my old Discus setup, a mated pair continually laid eggs on the flat leaves of a plastic plant. If you're going to keep pretty fish, might as well have a pretty tank. Lol.
