For all you fishermen among the fishkeepers, I have a list of ocean fish pairings for lake fish (I apologize if this belongs elsewhere)
Big bass (like largemouth) pair well with Atlantic marlin steak (make sure it comes from the Atlantic, as Pacific marlin is too lean)
Smaller fish, such as perch or rock bass, pair well with Chilean sea bass ( make sure to get sustainably caught Falkland island sea bass though)
Pickerel (walleye) pairs well with good quality Atlantic tuna, such as Vita Sana Spanish canned yellowfin tuna)
Panfish, like sunfish or crappie, pair well with Atlantic snappers, such as red snapper, grey snapper, or yellowtail snapper.
Hope this helps!

Most of your pairings include threatened or rare fish, I try to avoid eating fish that are close to extinction.

That's funny. I knew they are threatened in some places, but not others, such as Falkland Island Chilean sea bass, which is an MSC certified fishery. And I do believe Vita Sana fishes sustainably. And about the snappers, their populations have increased enough in the past year or so to begin sustainable fishing. I do appreciate you pointing that out though, because we must remember to buy sustainably.
