What is the most recommended water test kit? I see that we need to watch the Amonia, Nitrites, and Nitrates but what else do we need to keep an eye on?

you can find out which one your water company uses then treat new tap water accordingly, no real need to test.
You don't test for that usually. If you are on municipal/city water you have chlorine in your water and most likely chloramine. You need to use a dechlorinator such as Prime to remove it.
