Most of the write-ups and descriptions I see about FW shrimp (ei; cherries, bees, tigers, etc.) talk mainly about their algae eating abilities, but none of them say anything about clean-up of detritus and left-overs. How well do they take care of that? I'm looking for a clean-up crew that actually looks cool, and ghosts don't fit that bill for me.

Yes, shrimp are very good at eating left overs. My shrimp wait under the other fish for some food to drop, the eat it.
i have a bunch of feeder "ghost shrimp" as part of my cleanup crew in a tank thats part water, part land (for a mtn horned dragon) and ive seen my shrimp swim to the surface and compete with the fish to get crickets that fall into the water.
