Just curious what the "ideal" settings should be for me to strive for with my Oscar, cichlid and jack demsey setup...what would be an ideal KH, GH, PH (7.0?) be?

Just try and keep those parameters the same. Consistency is more important that specific numbers. Just provide clean water and a quality pellet and the O should be good.
I agree with the 2nd reply, just try to keep it consistent . . . personally, for my CA/SA cichlid tanks, I keep my PH around neutral and and the hardness around medium-soft . . .
