I stopped feeding of my planted tank over the weekend to fight off alge. One night i turned on the light to see how the fish are doing and i saw one shrimp eating something. When i looked closer it looked like a snail... no shell... ? what going on here?

What snail was eaten? Most predators try to detach the mollusk out of their shells to eat them. Shells are there to protect them from their predators but most predators know how to pry them off to eat them.

Snails that have a "trapdoor" should be fine
It's not always fool-proof. Some predators find a way to get to the mollusk. If a predator simply tries to do everything to the point of harassing the snail, the snail eventually becomes stressed starving to death and may die.

My lone ghost shrimp eats snails all the time. Iv'e seen him pick them up and just start eating them. Yum.

Idk what snail it was. I just looked at him n saw a mollusk lol think i need to feed them some more
