I am thinking about getting a Giraffe cat for my 360 gallon but I am worried he might outgrow and eat some of my smaller fish like my 6" polypterus or 3" uaru cichlid. Tank is 76x36x30 too small?

That size tank will be fine for a couple of years but they do eventually grow to around 2 1/2' to 3' long. The other fish will likely be fine, at least as far as not being eaten as giraffe cats tend to omnivorous bottom feeders and not predators but will eat something like a small goldfish if given the opportunity. Some giraffe catfish will show tendencies of being territorial when they get larger, not so much to kill their tank mates but can become bullies at times. They are one of my all time favorite species to keep but hate having to sell them when they get too big as they can have endearing personalities I've found. The other problem is trying to find them a new owner with a huge tank once they do get too large as with any large species...

It appears the vast majority of g-cats ignore all and any live prey. Exceptions have been reported too. I think it may depend on how it was fed before.
