Hey, I am building a 480 gallon plywood aquarium for my garage. What is a good glass thickness for the front panel

You need to give the height and length dimensions of the front of the tank. The height is what determines water pressure and the length can affect how easy it is for the panel to flex, longer the panel, the thicker it should be. However, height is the main deciding factor.

I'm guessing 480 Gallon will be 8x4x2 tall so 1/2" glass to 5/8" glass with those dimensions is fine
