Always kept monster aggressive fish in my 300. Deciding to try a more realistic look aquascape with severums, geos loaches etc. 2 part question, what is an large very colorful schooling fish that the sevs and geos won't eat. Second question would sevs and geos eat Java moss? Is there any plant that's easy to keep that they won't eat?
 
Some of the larger tetras like serpaes or Colombians would look good.
Can’t comment on geos, but my sev destroys any plant it sees.

Try roseline sharks. Very colorful schoolers too big for severums/eartheaters to eat, even if they're not especially large (15 cm).

I would suggest Columbian tetras as well.
Not sure about Java moss, but my severums and geos didn't bother any anubias plants.
 
+1 on the Columbian Tetra deep body personally kept a small group of them with Redhead Tapajos.

put the plants much earlier than fish so they can establish-

+1. Plants before fish is often overlooked, but much easier on the plants if they have the head start.
 
I like Hemiodus w/ mid to large SA cichlids.. I had H. gracilis previously, rehomed and just ordered a new small school for my SA Geo / Angel tank.. The guy I rehomed them to loved them so much he added more..

Re: plants, I kept anubias in the tank even with heros (sevs)... I'm rescaping next week, rehoming the heros and switching the anubias to vals.. I have another tank with redhead geos that includes amazon swords.. never had any issues with geos or angels and plants
 
Geo's won't mess with plants other than while sand sifting. Sev's are hit and miss on plants. I agree with the other comments about planting first. Give the plants 2 weeks to a month before adding fish if you use rooted plants like Val's, swords or crypts.
A school of silver dollars would go really well with Sev's. F FJB has them in a planted tank.
