Gold/White Saum, sexing, blood worms ect

I started out with a green terror pair 2 years ago who came with a 45G setup. Fell in love with them but they decided to spawn and well, the tank was too small so I had to rehome them. Now I have a 125G and I found some GT's 3 hours away so I picked them up, the 2 that I kept looked like male and female. Male is deff a gold saum, female may be white but its hard to tell with male chasing her around incessantly. I swear out of the whole tank she's the one who is picked on the most.
This is going to be a multi question post, I remember when I got my first pair I was disappointed because I found I had gold Saums and so they were not true GT's. Looking back I dont think it mattered, they're beautiful nonetheless. Did a bunch of reading up and Im still not clear on if theres 3 green terrors the Stalsbergi being wild type and the white/gold Saums being Rivaletus? or if the gold Saum is Rivaletus and the white Saum is Stalsbergi? Lots of conflicting info out there
Whats the deal with blood worm addiction? Should I not feed this to them at all?
Another thing I was wondering is What PH is best for them? I was under the assumption that they liked higher PH but it seems they come from black water? In the event that they pair up should I raise the temp to encourage spawning? (currently 77) id likely have to remove the red flashes to keep injuries to a minimum
My tank is stocked with the 2 GT's in question, 2 red flashes, 6 snow white cichlids as dither fish and one gold algae eater. I was originally concerned about the terrors agression towards the flashes but im considering giving the male a time out because of how hes treating the assumed female.
these are said to be about a year old, girl is ~1.5" and boy is 2"

Probably too small to be sure of sex. Only 2 cichlids at the moment is bound to cause fighting.
Gold and white suam are both color variants of A. Rivulatus, but are the same species and what is known today as the green terror.
Stalsbergi used to be the green terror, but is a separate species and isn’t too common these days.
Ideal pH is about 7.5, they like it more neutral.
Bloodworms should only be a treat for most fish, don’t feed them bloodworms for a while to get them to eat other foods.

The seller tells me they are a year old, how much bigger or how old should they be to sex? theres 10 cichlids in the tank

I’m pretty sure by 3-4 inches it becomes easier.
 
Can anyone comment on the bloodworm addiction issue?
Don’t feed bloodworms for a while. Eventually they will learn to eat other foods.
