Grow out tank question

Hi there MFK, I about a month ago bought a 3 inch ornate bichir and have been growing him out in a 40 gallon. He is about 4 inches now and I was wondering when I should move him into a larger tank to avoid stunting his growth? I currently have a 55, a 60, and a 75 that have the availability for his next stage in the grow out process. His next to final stop will be a 125 gallon tank for a while, when he outgrows that he'll be in 240. Thank you very much for any responses!
 
Best to move when your water change schedule can no longer cope with the nitrates produced by the fish probably ;)

Thank you very much! While I'm here, and if you don't mind, do you think (eventually) in the 240 my ornate and a congo bichir would be fine, or does the congo need a larger tank, I'm aware they get pretty massive (close to 3 feet I believe)?
