Went on walk near some frozen ponds, and found some loctus seed pods, found some seeds in them that I took with me to see if I can grow them. Would putting them in a few inches of soil/mud under a light grow them? Or putting them in an enclosed moist container with coconut fiber also work?

They're probably started by now. However, it's easiest to score lotus seeds with a file before you start them.

lotus or locust?
Lotus: Seeds are very durable. With a hacksaw blade, score the shell to 0.5~1mm depth, just until you see the pale coming through. Then put into water.
It'll sink, then swell & float, then sink again as it shoots a first leaf (~10days?). Won't always sink or float, but usually this is the pattern.
As shoot appears, bury it ~1' in a rich muddy pond-bottom. They want a lot of sun & a lot of dirt. From seed will shoot surface leaves & wander via sub-mud shoots around the space for a while before shooting an above-water leaf, particularly if your mud's not deep enough.

Locust seeds are a thing, but I forget...
