Gymnogeophagus Australis info needed!

I just got two gymnogeophagus australis' lined up, any body keep them and have any tips for me? I'm hoping to get a male and female.
 
Their care isnt different from any of the other gymnos. To breed them you have to cool them down during the winter for a couple of months. Easiest way is to just have an unheated tank. I feed mine a small pellet and suppliment with bloodworms, spirulina flake, and peas. Any specific questions?
 
nothing specific, these will be my first earth eaters so I want to make sure they get everything they need...I just got finished putting a "sand" patch on the bottom of the tank to encourage them to sift...I just want to make sure that it goes off without a hitch once I introduce them into the tank.
 
It's much better to keep them as a group/harem (1-2M/4-6F) than just a male and a female.

They're sub-tropical fish so cooler temperatures are also preferable. I feed NLS, Kensfish flake and red wiggler worms.

Can others be added at a later date or should the "harem" be added all at once?
 
I'm wondering how to sex these fish? any ideas? The larger one appears to be male, the other is smaller, fins are less pronounced and is acting submissive toward the larger one...hmmmm....
