I made a slight impulse buy of a gymnothorax polyuranodon because I heard it was the only true fresh water moray. Getting some varying opinions and some people have told me that they can live for a number of years in fresh but would eventually need brackish. It’s going in my empty 90 that my Protopterus Amphibius was in before it died, will this be suitable long term?

There is a bit of conflicting info on this fish, at all levels and not just at hobbyist level. Seems like you should be fine with freshwater unless you get to full adult size and want to try to breed it. However as for your size question, I would suggest that you will get a good number of years in the 90 (depending on size now of course) but at some point you will need a bigger tank assuming the fish passes a good aquarium size of 3 ft and goes on towards it’s possible size of nearer 5ft at which point you will have such an impressive fish you will likely get a bigger tank.
