I have read a lot of posts on this site, and thanks for all of the info;)

I am currently cycling a 55 gal with white cloud mountain minnows, originally I wanted to put some guppies, platies, etc. in there. However, I kept passing these little buggers with lots of personality at my lfs- so I think I am going towards cichlids- just not sure what kind yet. I thought about either a malawi set up or maybe some angels and rainbows with some gourami and a bristlenose pleco as well. My ultimate goal is to work up to a 250 gal for a freshwater stingray- I have wanted one since I was 17:D (That's 9 1/2 years of waiting, FYI!) I also like discus, but the lady at my lfs said they are not for beginners (I haven't had fish since I was a kid).

I also have a 5 gallon with the meanest looking beta you have ever seen, along with 2 solid black cats and a couple of kids.

Welcome! You should trade in the betta and the kids on a 250 setup!
