I have a 125 (6ft) tank with (2) 4" tiger oscars, (1) 6" male red shoulder severum, (6) silver dollars (baseball size) .... my question is can I add a satanoperca leucosticta .... and what about a pleco maybe? I would like some sort of bottom scavenger. I have (2) AC500 and (2) 405 Fluvals for filtration and do weekly 50 water changes.... am I overcrowding too much?

The tank is a bit crowded to add a satanoperca leucosticta simply because I think they require very clean water. If you have awesome filtration and can keep up with the water changes you can probably get away with it. I wouldn't recommend a big Pleco because they're waste-making machines and deteriorate your water quality very quickly. For a clean up scavenger, I like Senegal bichirs. I keep them in my tanks and they clean up all the food in every crack, crevice and corner of the tank. No worries about leftovers. A catfish would work too.

Plus they are very shy fish, hell I've seen them being bullied by apisto's before ... let alone an oscar or sev.

I've kept Satanoperca jurupari in a 125gal with my Viejas and Crenicichla before. They are able to hold their own for the most part. If you can get them a little bit larger than the fish you currently have in there though that would be best as they are slow growers.

Keep the filtration up top notch though, as was stated, they as well as other fish love super clean tanks!!

If you do add a pleco I'd go with something like a bushynose rather than a common pleco...smaller, better algae eaters, less poop.

That's some pretty major filtration, I think you'd be OK but as Peanut says get your geo (satanoperca, you know what I meant though heh) bigger than your O's and sev.
