Help please, I need some advice

So I've had this female C. Quad (Red-Claw Crayfish) for about two and a half months now and she has been doing great... molting regularly and growing fast, always hungry. When doing water changes I've always used tap water treated with ph regulator that put the ph at 6.5. I decided to stop using the ph regulator to save money and slowly adjust the ph of the tank to my tapwater ph (7.8). I did the first water change a couple days ago with the 7.8 water without adding the ph regulator and now she is acting a little funny. Shes constantly climbing the walls and trying to get out of the tank which she has never done before, and her appetite has decreased. She NEVER turned away food before and now shes leaving most of her pellets untouched. Should I abandon my attempt at adjusting the ph and just continue using the ph regulator?? Does she just need time to adjust to her changing environment?? What should I do??
 
I guess that would be the safest thing to do, but I really don't want to have to keep adding ph regulator to my tap water. Is a ph of 7.8 bad for a C. Quad, or is it just the change in ph that is bothering her??
 
Now she isn't eating at all. I just tested the water in the tank and I don't understand what is wrong.

Nitrate: <20ppm
Nitrite: 0
Ammonia: 0
PH: 6.5 (still, even though I've been doing water changes with 7.8 water)

I thought it was cuz of the change in ph from doing water changes, but the ph hasn't even changed. The only thing that may have changed was the temperature dropped a degree or two. I just don't get it.

why what temp was/is the water as under 18 celcius they survive but go of their food and dont shed anywhere near as often.
 
Well, I tried switching up her food with good results. I bought a different kind of sinking pellets and got a few feeder fish. She gobbled both right up, so maybe she was just in need of some variety in diet.....She is still almost constantly trying to get out of the tank though. I'm afraid shes going to get one of her legs or claws caught and rip it off. I'll try creating some good hiding spots for her to settle into....any other suggestions??

Thanks. Thats good cuz I have decided to continue adjusting the ph to a steady 7.8 by using my tapwater without ph regulator. I'm actually hoping her strange behavior will stop once she gets used to this new change in her environment.
