Well on an impulse buy I picked up seven 2.5 inch Archerfish, come to find out they are brakish. I'm going to change their tank over to brakish, however I need to know how much I can raise the salnity at a time, in order to keep from cooking the bacteria... :)

cool, is their a chart or something? and what marine salt would you suggest using?

A chart? Do you mean for measuring salinity?
It's measured as specific gravity. Water alone has an SG of 1.000. SG is measured on a hydrometer or refractometer. Refractometers are said to be more accurate, but they're also more expensive.
I use Instant Ocean salt but I don't think it really matters as long as you're using marine salt, not medicinal aquarium salt.

Okay I know what SG is and how to measure it... is there a chart of how much to add to raise a specified lv of SG??

That's a variation of another common question.
No, unfortunately there is no sure-fire way to know how much salt it will take to reach a certain SG. This is because over time the salt will absorb water from the air and gain mass. You can estimate, but until you have a feel for how much it takes in the container you're using, add some and measure until you're at the target SG.
In my 5 gallon bucket, it takes 20-30 teaspoons of salt to get to my target SG, which is between 1.005 and 1.010.

So in other words I need to take it uber slow, like over a couple of weeks. say 4 or 5?

Thats another question I had... What would be a good range for archers? Also the tank is maintained at 80.
