I am just about finished with my first canopy and am a little concerned about the light being close to the filter. I am mostly worried about splashes and have thought about stapling up a small splash shield. Does anyone else see a problem with this?

I would be worried too, power and water are not two things you want to take chances with,

you could flip the light like mentioned but there is still risk, I would try to cover it. Could just glue 2 scrap sheets of wood into a 90 degree box and glue it so it sits in front of the plug to the roof of the canopy.

Seems to be doing fine. I did not flip the light because the switch location. I used a cut milk jug to make a splash guard and hot glued it in place.
I also used spray adhesive and foil to reflect the light down into the water. There has been a little condensate but nothing that would infiltrate the light. Air stone would be out of the question without a glass divider as the splashes from bubbles provide quite a bit of splatter. All of the accessories are also plugged into a GFCI outlet so it's pretty safe. As long as I am consistent with water changes and the water level stays high the filter does not splash.
