had to do a major up heaval in my tanks and when i have put all back together the amonias etc have sky rocketed fish are dying dont know what to do help should i replace all water 100 % water change 50 % dont know helphi there

Well to start, your tanks are WAAAYYY overstocked. When you say you did a major up heaval, what do you mean? What do you have for filtration?
 
So much information coming in different directions, difficult to understand.
 
the large tanks has a tetra tec 1200 the fish in this tank arnt that big yet but i do relise that they need bigger the upheaval was a 2 foot tank under it leaked so had to remove the whole lot to clear up the water so had to transfer them and then put them back
 
Ignoring the fact they massively overstocked and long-term solution is get them homes that they can live in for the short term yes do very frequent water changes I would do 20-40% each day. Things like Prime can help detoxify ammonia and nitrite as well.
