Over the past couple of days one of my smaller dats 5.5" has developed a bright red sore mouth, looks swollen too
Seems to have trouble eating and has started to flick his mouth on the sand.

Any ideas?

You can probably rule out that it is an injury as I doubt the dat would flick against the sand if it were...Sounds like an infection or infestation of a parasite of some kind.

^^ Agreed. Add salt to the water. If it doesn't get better on a couple of days, treat with an antibiotic

Would it be best to treat the entire tank with salt? Or take him out and give a salt bath?

What ratio of salt is best?

Treat the whole tank. 1 Tablespoon per 5 gallons.
