HITH in Red Devil/Midas/Hybrid

I'm getting a fish that needs a bit of TLC. The people who currently have him picked him up in Dallas about 3 weeks ago. I'm not sure if he's a red devil, a Midas, or a hybrid of the two. It's obvious he's not feeling great as he's currently off food, and not very active, but the first thing I recognized when I saw him was the HITH. I've had experience with HITH with my first Oscar. The advice I was given to treat him was very successful and simple enough.
Monitor his nitrates and keep them below 20 ppm.
Feed a good high quality cichlid pellet and give a bit of variety in his diet.
Make sure there's plenty of quality filtration.

I plan on following this method, and I'm assuming that regular cichlid pellets would be a good option for this red devil/midas cichlid?
If not, any suggestions?
I currently feed my Oscars Hikari, fluval bug bites, fresh banana, blanched zucchini, fresh watermelon when I have it, as well as frozen foods (brine shrimp, blood worms, and cichlid medley), live feeder insects (mealworms, crickets, and roaches), and grocery store shrimp. Would this be a good diet for the new guy? (The non kibble foods aren't a daily thing. They get fed once a week at most)
